Ingredients
For the Crust:
- 6 oz. saltine crackers
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
For the Filling:
- 14 oz. sweetened condensed milk
- 4 large egg yolks
- ¼ cup lemon juice
- ¼ cup lime juice
For Serving:
- 2 cups whipped cream or whipped topping
- Lemon and lime slices
Instructions
1. Preheat Oven and Prepare Crackers:
Preheat the oven to 350°F (175°C).
Coarsely crush the saltine crackers. You should end up with about 2 ¼ cups of crumbs. You can crush them in a food processor or by placing them in a resealable plastic bag and using a rolling pin.
2. Combine Crust Ingredients: Combine the crushed crackers, melted butter, and granulated sugar in a medium bowl.
Stir until well combined and the crumbs hold together when pressed with your fingers.
3. Press Crust into Pie Plate:
Press the crust mixture into the bottom and up the sides of a 9-inch pie plate.
Press firmly to pack the crumbs and make an evenly thick crust.
4. Freeze and Bake the Crust: Place the crust in the freezer for 10 minutes to firm it up slightly.
Bake the crust on the middle rack of the preheated oven for 20 to 25 minutes, or until golden brown.
5. Cool the Crust:
Set the baked crust aside to cool slightly, about 10 minutes.
6. Make the Filling:
While the crust is baking and cooling, make the filling.
Whisk together the sweetened condensed milk, egg yolks, fresh lemon juice, and fresh lime juice in a medium bowl until smooth and well combined.
7. Pour Filling into Crust: Pour the filling into the baked and slightly cooled crust.
8. Bake the Pie: Return the pie to the oven and bake until the center of the filling is just set, about 15 minutes.
9. Cool and Chill: Let the pie cool on a wire rack at room temperature for 1 hour.
Then, refrigerate the pie until it’s completely cold, at least 2 hours or up to overnight.
10. Top and Serve:
Top the chilled pie with whipped cream (or whipped topping) just before serving.
Garnish with lemon and lime slices, if desired.
