  • Author: Alyssa

Description

Make this cozy Blueberry Baked Oatmeal for an easy, wholesome breakfast! Naturally sweetened with bananas and packed with juicy blueberries, it’s a healthy meal prep recipe that’s perfect for busy mornings.

Ingredients

Scale
  • 2 cups rolled oats (gluten-free if needed)

  • ½ cup almond butter (or any nut/seed butter)

  • 2 large bananas

  • ½ cup blueberries

  • Optional: Honey or maple syrup for extra sweetness

  • Optional: Milk if batter is too thick

  • Optional: Walnuts or mix-ins for topping

Instructions

Step 1
Preheat your oven to 180°C (350°F). Line an 8 x 8-inch baking pan with parchment paper and set aside.

Step 2
In a large mixing bowl, mash the bananas until smooth. Add the rolled oats and almond butter.

Step 3
If you like, drizzle in a little honey or maple syrup for extra sweetness. Mix everything together until well combined.

Step 4
Gently fold in half of the blueberries using a rubber spatula.

Step 5
If the batter feels too thick, add a splash of milk to loosen it. If it feels too runny, sprinkle in a few more oats.

Step 6
Transfer the batter into the prepared baking pan, spreading it evenly.

Step 7
Scatter the remaining blueberries over the top. Add any extra mix-ins like chopped walnuts if you like.

Step 8
Bake for about 15 minutes, or until the edges are golden brown and a skewer inserted into the center comes out mostly clean.

Step 9
Remove from the oven and let the baked oatmeal cool in the pan for about 15 minutes.

Step 10
Carefully transfer the oatmeal to a wire rack to cool completely before slicing and serving.
