Ingredients
2 long sweet peppers, thinly sliced
4 small chicken breasts
1 tsp smoked paprika
1 tsp onion powder
1/4 tsp cayenne pepper
1/2 tsp oregano
1/4 tsp salt
1/8 tsp black pepper
6 cloves garlic, minced
1 cup cream cheese
1/2 cup cheddar cheese, shredded
Instructions
Step 1: Preheat the Oven and Prepare the Dish
Preheat your oven to 375°F.
Spray a baking dish lightly with oil to prevent sticking.
Step 2: Layer the Peppers and Chicken
Spread the thinly sliced sweet peppers evenly across the bottom of the prepared baking dish. Place the chicken breasts on top of the peppers, arranging them in a single layer.
Step 3: Season the Chicken
In a small bowl, mix together the smoked paprika, onion powder, cayenne pepper, oregano, salt, and black pepper. Sprinkle the spice mixture over the chicken breasts, making sure to coat both sides. Rub the minced garlic onto the chicken along with the spices to deepen the flavor.
Step 4: Add the Creamy Topping
Top each chicken breast with about 2 tablespoons of cream cheese, spreading it slightly. Use up all the cream cheese, ensuring every piece of chicken is covered. Sprinkle the shredded cheddar cheese over the entire baking dish, letting some fall over the peppers too.
Step 5: Bake the Dish
Cover the dish loosely with foil and bake for 25-30 minutes until the chicken is cooked through and tender. Remove the foil and broil for 2 minutes at the end to melt and slightly brown the cheese. Place some roasted pepper slices on top of each chicken breast before serving for a vibrant presentation
