  • 1 large head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour (or gluten-free flour blend)
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup Buffalo sauce (your favorite brand and heat level)
  • 2 tablespoons vegan butter, melted

Instructions

Step 1: Preheat Oven and Prepare Baking Sheet

Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper.

Step 2: Make the Batter

In a large bowl, whisk together the flour, water, garlic powder, onion powder, salt, and pepper until a smooth batter forms. The batter should be thick enough to coat the cauliflower but not too thick that it clumps.

Step 3: Dip Cauliflower in Batter

Dip each cauliflower floret into the batter, making sure it’s evenly coated. Let any excess batter drip off.

Step 4: Arrange on Baking Sheet

Place the battered cauliflower florets on the prepared baking sheet in a single layer, making sure they’re not touching each other. This will help them to crisp up evenly.

Step 5: Bake (First Bake)

Bake the cauliflower for 20 minutes, or until the batter is set and the cauliflower is starting to brown slightly.

Step 6: Make Buffalo Sauce Mixture

While the cauliflower is baking, prepare the Buffalo sauce mixture. In a separate bowl, combine the Buffalo sauce and the melted vegan butter. Stir well to combine.

Step 7: Toss Cauliflower in Sauce

Remove the cauliflower from the oven and carefully toss the florets in the Buffalo sauce mixture, ensuring that they’re evenly coated.

Step 8: Bake Again (Second Bake)

Return the sauce-coated cauliflower to the baking sheet, spreading them out in a single layer.

Bake for an additional 15-20 minutes, or until the cauliflower is crispy and the sauce is bubbly.

Step 9: Serve
