Ingredients
6 Wholemeal Weight Watcher tortillas
3 pieces of romaine lettuce, chopped
Chicken Avocado Mixture:
2 cups cooked shredded chicken
2 avocados, deseeded and diced
2 tsp freshly squeezed lemon juice
¼ cup sliced red onion
1 tbsp chopped fresh parsley
¼ cup Greek yogurt
1 tsp garlic powder
½ tsp sea salt
Instructions
Step 1: Make the Filling
In a large bowl, combine the shredded chicken, diced avocados, lemon juice, red onion, parsley, Greek yogurt, garlic powder, and sea salt.
Mix gently but thoroughly until all ingredients are evenly distributed.
Be careful not to mash the avocado too much—you want some nice chunks left for texture.
Step 2: Assemble the Wraps
Lay out the wholemeal tortillas on a clean surface.
Place a handful of chopped romaine lettuce slightly to the right of the center of each tortilla.
Spoon a generous amount of the chicken avocado mixture over the lettuce.
Step 3: Roll and Slice
Carefully roll each tortilla up tightly, tucking in the sides as you go to keep the filling inside.
Once rolled, use a sharp knife to slice each wrap in half.
