- 1 cup all-purpose flour
- ½ cup crushed nuts (e.g., pecans)
- ¼ cup sugar
- 8 tablespoons salted butter, melted
- 21 ounces cherry pie filling (1 can)
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 cup Cool Whip (from 8 oz container)
- 6.8 ounces chocolate instant pudding (2 packages)
- 3 cups milk
- Remaining Cool Whip from 8 oz container
- ½ cup chocolate shavings or chocolate jimmies (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Combine flour, crushed nuts, sugar, and melted butter in a bowl.
- Press mixture into the bottom of a 9×13 baking dish and bake for 10 minutes. Let cool completely.
- Spread the cherry pie filling evenly over the cooled crust.
- In a mixer, beat cream cheese until light and fluffy. Add Cool Whip and then gradually mix in powdered sugar until smooth.
- Spread cream cheese mixture over the cherry layer.
- Prepare chocolate pudding with milk according to package instructions. Spread over cream cheese layer.
- Top with remaining Cool Whip and smooth out evenly.
- Sprinkle with chocolate shavings or jimmies if desired.
- Refrigerate until ready to serve.
Notes
- You can substitute walnuts for pecans in the crust if preferred.
- Make a day ahead for best flavor and texture.
- Store leftovers in the refrigerator, covered, for up to 3 days.
- Use sugar-free pudding or light Cool Whip for a lighter version.
