Let’s make these delicious Chocolate-Covered Key Lime Pie Bites!
Step 1: Prepare the Crust
Line a mini muffin tin with mini muffin liners. This will prevent the pies from sticking. First step.
In a large bowl, combine the crushed graham crackers, sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand. Should hold together.
Pack about 1/2 teaspoon of the crust mixture into the bottom of each liner, pressing it down firmly to create a compact base. Set the muffin tin aside. Pack it well.
Step 2: Make the Filling
In a large bowl, using a hand mixer, beat the softened cream cheese until it’s completely smooth and fluffy. This should take about 2-3 minutes. Important step.
Add the sweetened condensed milk, Key lime juice, Key lime zest, and vanilla extract. Beat until all the ingredients are well incorporated and the filling is smooth and creamy. Scrape the bowl.
Step 3: Freeze the Pies
Divide the Key lime filling evenly among the prepared liners, filling each one almost to the top. It is a good amount.
Freeze the pies until they’re completely solid, at least 2 hours, or preferably overnight. This is crucial for making them easy to dip in chocolate. Must be solid.
Step 4: Remove from Liners
Remove the frozen Key lime pies from the liners and place them on a baking sheet lined with parchment paper. This will make cleanup easier. Quick step.
Step 5: Melt the Chocolate
In a medium heat-safe bowl, combine the chocolate chips and coconut oil. A glass bowl is best.
Microwave the mixture in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth. Be careful not to overheat the chocolate.
In a small bowl, combine the 2 tablespoons of crushed graham crackers and 2 teaspoons of Key lime zest.
Step 6: Dip and Garnish
Spoon the melted chocolate over each frozen Key lime pie, allowing it to coat the top and sides. You can use a spoon or a small offset spatula to spread the chocolate evenly. Work quickly.
Immediately sprinkle the top of each chocolate-covered pie with the graham cracker and zest mixture. Before it hardens.
Step 7: Freeze Again
Freeze the pies again until the chocolate is completely hardened, about 30 minutes. This will set the chocolate coating.
