Ingredients
- 1 pint large strawberries
- 4 ounces semisweet chocolate, chopped
- 1 tablespoon plus ½ teaspoon shortening, divided
- 1 ounce white baking chocolate
- 4 drops food coloring, optional
Instructions
1. Prepare the Strawberries:
Wash the strawberries and gently pat them with paper towels until they are completely dry. This is crucial for ensuring that the chocolate adheres properly. Any moisture can cause the chocolate to seize.
2. Melt the Semisweet Chocolate: In a microwave-safe bowl, combine the chopped semisweet chocolate and 1 tablespoon of the shortening.
Microwave at 50% power, stirring every 30 seconds, until the chocolate is melted and smooth. Be careful not to overheat the chocolate.
3. Dip the Strawberries:
Dip each strawberry into the melted semisweet chocolate, holding it by the stem or leaves.
Allow any excess chocolate to drip off.
Place the dipped strawberries on a waxed paper-lined baking sheet.
4. Freeze Briefly: Freeze the dipped strawberries for 5 minutes. This helps to set the chocolate quickly.
5. Melt the White Chocolate (and Color, if Desired): Meanwhile, microwave the white baking chocolate and the remaining ½ teaspoon of shortening at 30% power until melted and smooth. Stir frequently.
Stir in food coloring, if desired, to tint the white chocolate.
6. Drizzle with White Chocolate: Drizzle the melted white chocolate over the set semisweet chocolate-covered strawberries. You can use a spoon, a fork, or a piping bag for this.
7. Chill and Serve: Refrigerate the strawberries until serving time. This allows the chocolate to set completely.
