Ingredients
2 cups cottage cheese
¼ cup coconut milk
¼ cup honey or maple syrup
1 teaspoon vanilla extract
Shredded coconut for garnish
Instructions
Step 1: Blend the Mousse
Add the cottage cheese, coconut milk, honey or maple syrup, and vanilla extract to a blender or food processor. Blend until completely smooth and creamy. Scrape down the sides once or twice to make sure all ingredients are fully incorporated and the texture is silky.
Step 2: Spoon and Chill
Spoon the mousse evenly into four serving glasses or jars. Smooth the tops for a clean finish. Place the glasses in the refrigerator to chill for at least one hour. This gives the mousse time to set and lets the flavors really blend together into something beautiful.
Step 3: Garnish and Serve
Just before serving, sprinkle each mousse with a little shredded coconut. Toast the coconut if you like for added texture and a touch of golden color. You can also add a slice of fresh pineapple or a mint leaf if you want something extra tropical and bright.
Storage Instructions
Store the mousse in the fridge, covered, for up to 3 days. It’s ideal for making ahead of time for dinner parties or keeping on hand for a healthy dessert during the week. Add garnishes just before serving so they stay fresh and crisp.
