Ingredients

Scale

  • 4 boneless, skinless chicken breasts, pounded to even thickness
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 12 ounces noodles, cooked and buttered
  • Fresh parsley, chopped for garnish
  • Grated Parmesan cheese, for garnish

Instructions

  1. Prepare the Ingredients: Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through, about 4-5 minutes per side. Remove from skillet and set aside.
  3. Prepare the Sauce: In the same skillet, melt butter. Add sliced mushrooms and cook until browned, about 5 minutes. Add garlic, thyme, and oregano, and cook until fragrant, about 1-2 minutes.
  4. Deglaze the Pan: Pour in chicken broth and bring to a simmer, scraping up the browned bits from the pan. Reduce by half, about 5 minutes.
  5. Finish the Sauce: Add heavy cream and return to a simmer. Cook until the sauce thickens slightly, about 3-4 minutes.
  6. Combine: Return the chicken to the skillet, coating with the sauce, and warm through.
  7. Serve: Place buttered noodles on a plate, top with chicken and sauce. Garnish with parsley and grated Parmesan cheese.
