Ingredients
16 oz cottage cheese (low-fat or full-fat, your choice)
⅓ cup peanut butter (creamy, unsalted)
⅓ cup honey (or maple syrup)
⅓ cup chocolate chips (or chopped dark chocolate, melted)
⅓ cup chopped peanuts (salted or unsalted)
Instructions
Step 1: Blend the Base
In a medium bowl, combine the cottage cheese, peanut butter, and honey. Use an immersion blender or regular blender to blend until completely smooth. The texture should be thick, creamy, and almost like a cheesecake mousse.
Step 2: Melt the Chocolate
Melt the chocolate chips using your preferred method. I like to use the “warm” setting on my toaster oven, but a microwave works just as well. Heat in 20-second intervals, stirring between each one, until the chocolate is fully melted and glossy. If it starts to thicken or seize, add a small spoonful of ghee or coconut oil to smooth it out.
