  • 1 cup full-fat cottage cheese (excess liquid drained)
  • 1/4 cup liquid egg whites
  • 2 tbsp gluten-free flour
  • 1/2 tsp garlic powder
  • 1/2 tsp italian seasoning
  • pinch of salt
  • 1/2 tsp black pepper
  • 1/4 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese

 

  • 12 turkey pepperoni slices

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F.
  2. Blend Ingredients: In a blender, add the cottage cheese (excess liquid drained), egg whites, gluten-free flour, garlic powder, Italian seasoning, and a good pinch of salt and pepper until well combined.
  3. Prepare Baking Sheet and Pour Batter: Pour the cottage cheese mixture onto a parchment lined baking sheet and spread it out evenly into a circle shape. You want it approx 1/4 inch thick.
  4. Bake Flatbread: Bake in the oven for 32-35 minutes or until the flat bread has turned a golden brown color.
  5. Add Toppings: Remove from oven and spread a thin layer of marinara sauce over the top, followed by mozzarella cheese and pepperoni slices.
  6. Bake again.
  7. Cool.
