Ingredients
2 cups cottage cheese
1 cup fresh raspberries
¼ cup honey or maple syrup
1 teaspoon vanilla extract
Fresh raspberries and mint leaves for garnish
Instructions
Step 1: Blend the Mousse
In a blender or food processor, combine the cottage cheese, fresh raspberries, honey or maple syrup, and vanilla extract. Blend until completely smooth and creamy. Scrape down the sides as needed to make sure all the berries are fully incorporated.
Step 2: Spoon and Chill
Divide the mousse evenly among four small serving glasses or jars. Smooth the tops if you’d like a neat finish. Place them in the fridge and chill for at least 1 hour to allow the flavors to develop and the texture to firm slightly.
Step 3: Garnish and Serve
Right before serving, top each mousse with a few fresh raspberries and a small mint leaf. The pop of color and freshness really takes the presentation to the next level.
Storage Instructions
Store the mousse in an airtight container or covered glasses in the fridge for up to 2 days. It’s perfect for making ahead of time for parties or meal prep. Keep the garnishes separate until just before serving to maintain the best texture and color.
