  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese (plus more for serving)

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the penne according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Make the Base for the Sauce: Heat olive oil and butter in a large skillet over medium heat. Add minced garlic and red pepper flakes, cooking for 1 minute until fragrant.
  3. Deglaze with Vodka: Stir in the vodka, letting it simmer for 2-3 minutes to cook off the alcohol.
  4. Add Tomatoes and Cream: Pour in the crushed tomatoes, stirring to combine. Let the sauce simmer for 5-7 minutes, allowing it to thicken slightly. Lower the heat and stir in the heavy cream, cooking until the sauce is smooth and creamy.
