These Easter Egg Cereal Treats are a fun, festive, and incredibly easy dessert! I love how colorful and cheerful they are
Ingredients
- Cooking spray
- 1 (10-ounce) package mini marshmallows (about 6 cups)
- 4 tablespoons salted butter
- Food coloring (4 different colors)
- 6 cups crispy rice cereal
Instructions
1. Prepare the Loaf Pan:
Coat a 9-by-5-inch loaf pan with cooking spray.
Line the pan with 2 strips of parchment paper, placed perpendicularly and overlapping. Leaving an overhang on all sides. This will make it easy to lift the treats out of the pan later.
Spray the parchment paper with cooking spray. This is important to prevent sticking.
2. Make the First Layer:
Put 1 ½ cups of the mini marshmallows and 1 tablespoon of the salted butter in a medium microwave-safe bowl.
Microwave until the marshmallows are puffed and the butter is melted, about 1 minute.
Stir the mixture until it’s completely smooth. If the marshmallows aren’t fully melted, microwave for 30 more seconds.
Tint the melted marshmallow mixture with one of the food coloring colors, stirring to combine evenly.
Add 1 ½ cups of the crispy rice cereal to the tinted marshmallow mixture. Stir until the cereal is well coated.
Spray your hands or a rubber spatula with cooking spray. This will prevent the mixture from sticking to you.
Press the cereal mixture into the prepared loaf pan in an even layer.
3. Repeat for the Remaining Layers:
Repeat step 2 three more times. Using the remaining marshmallows, butter, food coloring, and cereal.
Tint each batch of melted marshmallows a different color. Creating four distinct layers.
Press each layer of cereal mixture into the pan on top of the previous layer.
4. Compact and Refrigerate:
Once all four layers are complete, press the mixture down firmly in the loaf pan to make it compact.
Refrigerate the loaf pan until the cereal treat mixture is very firm, about 20 minutes.
5. Cut into Egg Shapes:
Lift the cereal treat loaf out of the pan using the overhanging parchment paper.
Carefully remove the parchment paper from the loaf.
Cut the loaf crosswise into ¾- to 1-inch-thick slices.
Using a 3- to 4-inch egg-shaped cookie cutter, cut one egg diagonally from each slice. You may be able to get more than one egg per slice depending size.
