Ingredients
2 chicken breast fillets (about 250g / ½ pound each)
Salt flakes and black pepper to taste
1 tablespoon olive oil
1 tablespoon salted butter
1 golden shallot, finely chopped
2 cloves garlic, finely chopped
¾ cup chicken stock or broth
3 teaspoons gelatin or ½ teaspoon glucomannan powder
1 teaspoon fresh thyme leaves
1 teaspoon finely grated lemon zest
3 tablespoons lemon juice
Lemon slices and freshly chopped parsley for serving
Instructions
Step 1: Prepare the Chicken
Slice each chicken breast fillet in half lengthwise to create thinner pieces.
Season both sides generously with salt flakes and black pepper.
This ensures each bite is flavorful and seasoned to perfection.
Step 2: Cook the Chicken
Heat the olive oil in a large skillet over medium-high heat.
Working in batches, cook the chicken breasts for about 3–4 minutes per side until golden and cooked through.
Transfer the cooked chicken to a plate and set aside.

Add the butter to the same skillet, allowing it to melt and pick up all those tasty browned bits.
Toss in the chopped garlic and shallot, sautéing until fragrant and translucent, about 2–3 minutes.

Pour the chicken broth into the pan and sprinkle in the gelatin or glucomannan.
Add the fresh thyme and bring everything to a gentle simmer, scraping the bottom of the pan.
Cook for 3–4 minutes until the sauce reduces slightly and thickens to a silky texture.
Step 5: Finish and Serve
Stir in the lemon zest and lemon juice, blending them into the sauce.
Return the cooked chicken to the skillet, spooning some of the sauce over the top.
Simmer for another 2–3 minutes until the chicken is warmed through, then garnish with lemon slices and chopped parsley before serving.
