8 oz (225 g) penne pasta
2 boneless, skinless chicken breasts, sliced into strips
2–3 teaspoons Cajun seasoning (adjust to taste)
1 tablespoon olive oil
1 tablespoon unsalted butter
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 cloves garlic, minced
1 cup (240 ml) heavy cream
1/2 cup (120 ml) chicken broth
1/2 cup grated Parmesan cheese
Salt and black pepper, to taste
Fresh parsley, chopped, for garnish
Instructions
Cook the Pasta: Boil pasta in a large pot of salted water according to package instructions until al dente. Drain and set aside.
Cook the Chicken: Season chicken strips with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, until golden and fully cooked. Remove from the skillet and set aside.
Sauté Vegetables: In the same skillet, melt the butter. Add the bell peppers and sauté for 3-4 minutes until softened. Add minced garlic and cook for 1 more minute until fragrant.
Make the Sauce: Reduce the heat to medium. Stir in heavy cream and chicken broth, scraping any browned bits from the skillet. Simmer the sauce for 3-5 minutes, stirring frequently, until it thickens slightly.
Combine: Stir in the Parmesan cheese until melted and smooth. Season with salt and black pepper to taste. Add the cooked chicken and pasta to the skillet, tossing to coat everything in the creamy sauce.
Serve: Garnish with fresh parsley and an extra sprinkle of Parmesan, if desired. Serve hot.
