1 cup fresh pineapple chunks (or canned)
¼ cup low-sodium soy sauce

1 tablespoon rice vinegar
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1 teaspoon sesame oil
1 tablespoon cornstarch mixed with 2 tablespoons cold water
For Garnish and Serving:
1 tablespoon sesame seeds
3 green onions, sliced
Cooked brown rice or quinoa
Instructions
Step 1: Marinate the Chicken
In a bowl, whisk together the soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil.
Add the chicken pieces and toss to coat them evenly.
Let the chicken marinate for at least 30 minutes or refrigerate for up to 2 hours for extra flavor.
