  • ¼ cup fresh herbs (such as parsley, chives, dill, or a mix), finely chopped

 

  • ½ cup milk (plus extra for brushing)

Instructions

  • Preheat and Prep: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  • Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder (if using).
  • Cut in the Butter: Using a pastry cutter or fork, cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Add Wet Ingredients: Stir in the cottage cheese, chopped herbs, and milk. Mix until the dough just comes together—avoid overmixing.
  • Shape the Dough: Turn the dough out onto a lightly floured surface. Gently knead it a few times to bring it together. Pat or roll the dough to about ¾-inch thickness. Use a round cutter (or a glass) to cut out biscuits. Re-roll scraps as needed.
