Ingredients
Scale
4 slices of day-old bread (challah or brioche preferred)
2 large eggs
1 cup whole milk (or alternative)
2 teaspoons ground cinnamon
2 tablespoons granulated sugar
1 teaspoon pure vanilla extract
2 tablespoons butter (or coconut oil for healthier option)
For the glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla extract
Instructions
Prepare the Bread: Cut the bread into bite-sized pieces, about 1-inch cubes. Set aside.
Make the Custard: In a mixing bowl, whisk together the eggs, milk, cinnamon, sugar, and vanilla until well-combined.
Soak the Bread: Gently dip each piece of bread into the custard mixture, letting it soak for a few seconds but not too long; we want them to hold their shape.
Heat the Pan: In a large skillet, melt the butter over medium heat, allowing it to foam.
Fry the Bites: Add the soaked bread cubes to the skillet in a single layer, cooking until golden brown, around 2-3 minutes per side.
Make the Glaze: While the bites are cooking, in a small bowl, combine the powdered sugar, milk, and vanilla extract until smooth.
Serve: Drizzle the glaze over your cinnamon roll french toast bites while they’re warm. Enjoy them fresh off the pan!
