Ingredients
2 skinless, boneless chicken breasts
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano
Sea salt and black pepper, to taste
1 tsp lemon zest
1 tbsp sunflower oil, canola oil, or avocado oil
For Serving:
Slices of butter
Slices of lemon
Instructions
Step 1: Prepare the Chicken
Pat the chicken breasts dry with a paper towel to remove excess moisture. Carefully slice each chicken breast lengthwise through the center to create two thinner pieces. This helps them cook faster and more evenly.
Step 2: Season the Chicken
Season both sides of the chicken pieces generously with onion powder, garlic powder, oregano, salt, and black pepper. Sprinkle lemon zest evenly over the chicken to infuse it with a bright citrus aroma.
Step 3: Heat the Skillet
Place a cast iron skillet over medium-high heat and allow it to get hot. Add the oil and swirl it around to coat the bottom of the pan.
Step 4: Cook the Chicken
Carefully place the chicken breasts into the skillet. Sear for 5 minutes on each side without moving them too much to develop a golden crust. If the chicken starts to burn, lower the heat slightly to maintain an even sear.
Step 5: Rest and Serve
Remove the chicken from the skillet and let it rest for about 5 minutes to lock in juices. Top each piece with a slice of butter or a drizzle of olive oil for extra richness. Squeeze a little fresh lemon juice over the top just before serving for a burst of brightness.
