Ingredients
6 slices bacon, diced
3 cups cauliflower florets
1 lb cooked chicken breast, shredded
4 cloves garlic, minced
½ cup ranch dressing
1 cup shredded cheddar cheese
½ tsp salt
¼ tsp black pepper
Chopped parsley for garnish
Instructions
Step 1: Preheat and Prepare
Preheat your oven to 375°F.
Lightly grease a 9×13-inch casserole dish and set aside.
Step 2: Cook the Bacon
Heat a skillet over medium-high heat. Add the diced bacon and cook until crispy and golden brown, about 5-7 minutes. Transfer the bacon to a plate lined with paper towels to drain excess fat.
Step 3: Blanch the Cauliflower
Bring a pot of water to a boil and add the cauliflower florets. Boil for about 3 minutes, just until slightly tender but still firm. Drain and let them cool, then roughly chop into smaller pieces.
Step 4: Assemble the Casserole
In the prepared casserole dish, combine the cooked bacon, chopped cauliflower, shredded chicken, minced garlic, ranch dressing, half of the shredded cheddar cheese, salt, and black pepper. Stir everything together until well mixed and level the top evenly.
Step 5: Top and Bake
Sprinkle the remaining cheddar cheese over the top of the casserole. Bake uncovered in the preheated oven for 10-15 minutes until the cheese is fully melted and bubbly.
Step 6: Garnish and Serve
Remove from the oven and sprinkle with fresh chopped parsley before serving hot
