Ingredients
2 cups cottage cheese
¼ cup maple syrup
1 teaspoon vanilla extract
½ cup chopped pecans
Whipped cream and extra pecans for garnish
Instructions
Step 1: Blend the Base
Add the cottage cheese, maple syrup, and vanilla extract to your blender or food processor. Blend until completely smooth and creamy, scraping down the sides as needed to make sure everything is fully mixed.
Step 2: Stir in the Pecans
Transfer the mousse to a mixing bowl and fold in the chopped pecans. This adds texture and keeps the nuts from becoming soggy while blending. Stir gently until they’re evenly distributed throughout the mousse.
Step 3: Spoon and Chill
Spoon the mousse into four serving glasses or jars. Smooth the tops and place them in the refrigerator to chill for at least one hour. This allows the mousse to firm up and the flavors to deepen into something rich and delicious.
Step 4: Garnish and Serve
Just before serving, top each mousse with a dollop of whipped cream and a few extra pecans. You can toast the pecans if you want even more flavor and crunch. A drizzle of extra maple syrup is never a bad idea either.
