  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. Sear the Beef: Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides (about 2-3 minutes per side). Transfer to the slow cooker.
  2. Add Potatoes: Add baby potatoes to the slow cooker.
  3. Make the Sauce: In a small bowl, mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour the mixture over the beef and potatoes.
  4. Add Broth and Cook: Add beef broth to the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
