1 1/2 pounds beef stew meat, cut into bite-sized pieces
1 pound baby potatoes, halved
4 tablespoons unsalted butter, melted
3 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1/4 cup beef broth
1 tablespoon olive oil
Instructions
Sear the Beef: Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides (about 2-3 minutes per side). Transfer to the slow cooker.
Add Potatoes: Add baby potatoes to the slow cooker.
Make the Sauce: In a small bowl, mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour the mixture over the beef and potatoes.
Add Broth and Cook: Add beef broth to the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
Serve: Serve warm, garnished with fresh parsley if desired.
