Miniature Delights: Cannoli Bites

These Cannoli Bites are a bite-sized version of the classic Italian pastry! They’re made with crispy pie crust shells filled with a sweet and creamy ricotta filling. Learn how to make this easy and delicious treat

  • 1 premade pie crust
  • 1/2 cup whole milk ricotta cheese, strained
  • 1/4 cup mascarpone cheese
  • 1/2 teaspoon vanilla extract
  • 1/3 cup powdered sugar

 

  • 1/3 cup mini chocolate chips, plus more for topping

Instructions

  • Prepare the Shells: Preheat oven to 400 degrees F (204°C). Unroll the room temperature pie crust onto a lightly floured surface or cutting board. Use a 2 ½ inch round biscuit cutter, cookie cutter, or a cup and cut out 12 rounds of pie crust. Place rounds in an ungreased mini muffin tin. Use your fingers to press the dough to fit the pan. Bake for about 10-12 minutes, or until pie cups are a light golden brown. Once baked, let cool for 15 minutes.
  • Make the Filling: In a medium bowl, mix together the strained ricotta, mascarpone cheese, powdered sugar, vanilla extract, and mini chocolate chips until combined.
  • Fill the Shells: Spoon the ricotta filling into the pie cups. If you want to make them look extra pretty, scoop filling into a zip-lock bag (large resealable bag) and cut a corner of the bag or add them to a pastry bag or piping bag.

 

  • Garnish and Serve: Sprinkle mini chocolate chips and dust with powdered sugar. Enjoy
