This No-Bake Funfetti Oreo Birthday Cake Cheesecake is pure celebration in dessert form! I absolutely adore how it combines the fun, nostalgic flavors of birthday cake Oreos and Funfetti cake mix with the creamy decadence of cheesecake
Ingredients
For the Crust:
- 25 Golden Birthday Cake Oreos
- 2–3 tbsp sprinkles
- ¼ cup (56g) butter, melted
For the Filling:
- 24 oz (678g) cream cheese, room temperature (Three 8oz blocks)
- ½ cup (104g) sugar
- 1 tsp vanilla extract
- 1 cup Funfetti cake mix, heat treated (See Note Below)
- 2 tbsp milk
- 8 oz Cool Whip (or stabilized homemade whipped cream), thawed
- 1 ½ cups (162g) Golden Birthday Cake Oreo crumbs (from about 16 Oreos)
- 7–10 Golden Birthday Cake Oreos, chopped
- 6 tbsp sprinkles
For the Whipped Cream Topping:
- ¾ cup (180ml) heavy whipping cream, cold
- 6 tbsp (44g) powdered sugar
- ½ tsp vanilla extract
- Golden Birthday Cake Oreo crumbs, optional garnish
- Golden Birthday Cake Oreos, cut in half, optional garnish
Instructions
Let’s build this easy and festive No-Bake Cheesecake:
1. Make the Crust:
Add the 25 Golden Birthday Cake Oreos and 2-3 tablespoons of sprinkles to a food processor. Pulse until they form fine crumbs.
Combine the Oreo-sprinkle crumbs with the melted butter in a small bowl. Stir together until well combined and all crumbs are moistened.
Press the crumb mixture firmly into the bottom and about halfway up the sides of a 9-inch springform pan. Use the bottom of a glass to pack it tightly.
Place the crust in the refrigerator to firm up while you make the filling.
2. Heat Treat Cake Mix:
Heat treat the 1 cup of Funfetti cake mix using either the microwave or oven method described in the Ingredients section above. Let it cool completely.
3. Make the Cheesecake Filling:
In a large bowl, using an electric mixer, beat the room temperature cream cheese and granulated sugar together until completely smooth and well combined. Scrape down the sides of the bowl.
Add the vanilla extract, the cooled heat-treated cake mix, and the milk. Mix on low speed, then medium speed, until well combined and smooth.
Gently fold in the thawed Cool Whip (or stabilized homemade whipped cream) using a rubber spatula until just combined. Do not overmix.
4. Add Mix-Ins:
Add the 1 ½ cups Golden Birthday Cake Oreo crumbs, the 7-10 chopped Golden Birthday Cake Oreos, and the 6 tablespoons of sprinkles to the filling.
Gently stir or fold until just combined and evenly distributed.
5. Fill Crust and Chill:
Spread the Funfetti Oreo filling evenly into the chilled crust. Smooth the top with an offset spatula or the back of a spoon.
Cover the cheesecake loosely with plastic wrap. Set in the refrigerator until firm, at least 4-5 hours, or preferably overnight.
6. Prepare for Serving:
Once firm, carefully remove the outer ring of the springform pan. You may need to run a thin knife around the edge first. Transfer to a serving plate if desired.
7. Make Whipped Cream Topping:
Just before serving (or up to a few hours before), make the topping. Add the cold heavy whipping cream, powdered sugar, and vanilla extract to a large bowl.
Whip with an electric mixer on high speed until stiff peaks form.
8. Decorate:
Pipe or spread swirls of whipped cream around the top edge of the cheesecake.
Top with additional Golden Birthday Cake Oreo crumbs and Oreo halves, if desired.
9. Serve:
Refrigerate until ready to serve. Slice with a sharp knife (wiping clean between cuts) and enjoy!
