- 3 tablespoons olive oil
- 2 pounds smoked sausage, sliced into bite-sized pieces
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 12 ounces diced tomatoes, undrained
- 1/2 cup heavy cream
- 1/4 teaspoon pepper
- 8 ounces dry whole wheat bow tie pasta
- 2 cups shredded cheddar cheese
Instructions
- Slice the smoked sausage into bite-sized pieces.
- Add olive oil to a large pot or Dutch oven and sauté the chopped onions and sausage over medium heat until the onions soften and the sausage is browned.
- Add minced garlic and cook for about 30 seconds, until fragrant.
- Stir in chicken broth, undrained diced tomatoes, heavy cream, and pepper. Mix well to combine.
- Add dry pasta and ensure it is fully submerged in the sauce. Cover and simmer for 15–20 minutes, stirring occasionally to prevent sticking, until the pasta is tender and the liquid is mostly absorbed.
- Remove from heat and stir in 1 cup of cheddar cheese until melted and creamy.
- Serve immediately, topped with additional shredded cheese if desired.
Notes
- Use spicy smoked sausage for added heat.
- You can substitute bow tie pasta with penne, rotini, or any short pasta.
- Stir occasionally while simmering to ensure even cooking and avoid sticking.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently with a splash of milk or broth to loosen the sauce.
