Step 1: Cook the Noodles
Cook the rice noodles according to the package instructions. Be careful not to overcook them, as they can become mushy.
Once cooked, drain the noodles in a colander and rinse them with cold water to stop the cooking process and prevent them from sticking together. Set aside.
Step 2: Make the Peanut Sauce
While the noodles are cooking, make the peanut sauce. In a small bowl, whisk together the peanut butter, soy sauce, lime juice, maple syrup, minced garlic, grated ginger, and red pepper flakes until smooth and creamy.
If the sauce is too thick, you can add a little bit of water, a teaspoon at a time, until it reaches your desired consistency. Taste and adjust the seasonings as needed – you might want to add more lime juice for extra tanginess, more maple syrup for sweetness, or more red pepper flakes for heat.
Step 3: Toss Noodles with Sauce

Add the thinly sliced bell pepper, julienned cucumber, julienned carrot, and chopped cilantro to the bowl with the noodles and sauce.
Step 5: Toss to Combine
Toss all the ingredients together gently until the vegetables are evenly distributed and coated with the sauce.
Step 6: Serve or Refrigerate
