Peanut Noodles

This Peanut Noodles recipe is a vibrant, flavorful, and incredibly satisfying dish that’s perfect for a quick weeknight meal or a make-ahead lunch. I’ve always been drawn to the bold flavors of Southeast Asian cuisine, and peanut sauce is one of my absolute favorites

  • 8 ounces rice noodles
  • 1/4 cup peanut butter (natural, smooth or crunchy)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • Juice of 1 lime (about 2 tablespoons)
  • 1 tablespoon maple syrup (or honey or agave nectar)
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (or more, to taste)
  • 1 bell pepper (any color), thinly sliced
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1/4 cup chopped fresh cilantro

Instructions

Let’s make these delicious and easy Peanut Noodles!

Step 1: Cook the Noodles

Cook the rice noodles according to the package instructions. Be careful not to overcook them, as they can become mushy.

Once cooked, drain the noodles in a colander and rinse them with cold water to stop the cooking process and prevent them from sticking together. Set aside.

Step 2: Make the Peanut Sauce

While the noodles are cooking, make the peanut sauce. In a small bowl, whisk together the peanut butter, soy sauce, lime juice, maple syrup, minced garlic, grated ginger, and red pepper flakes until smooth and creamy.

If the sauce is too thick, you can add a little bit of water, a teaspoon at a time, until it reaches your desired consistency. Taste and adjust the seasonings as needed – you might want to add more lime juice for extra tanginess, more maple syrup for sweetness, or more red pepper flakes for heat.

Step 3: Toss Noodles with Sauce

In a large bowl, combine the cooked and drained rice noodles with the peanut sauce.

Toss the noodles gently but thoroughly until they’re evenly coated with the sauce.

Step 4: Add Vegetables

Add the thinly sliced bell pepper, julienned cucumber, julienned carrot, and chopped cilantro to the bowl with the noodles and sauce.

Step 5: Toss to Combine

Toss all the ingredients together gently until the vegetables are evenly distributed and coated with the sauce.

Step 6: Serve or Refrigerate

Serve the Peanut Noodles immediately, or refrigerate them for later. The noodles can be enjoyed cold or at room temperature.
