Description
Juicy oven-baked pineapple bacon burgers wrapped in smoky bacon, topped with barbecue sauce and grilled pineapple slices, all served on soft brioche-style buns. A tropical twist on a BBQ classic, no grill required!

- 1 pound lean ground beef (93%-7% fat ratio)
- 4 tablespoons smoky style barbecue sauce, divided
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 8 slices smoked bacon, uncooked
- 4 slices fresh pineapple, ½ inch thick with core removed
- 4 bakery style burger buns (brioche style preferred)
Instructions
- Preheat the oven to 400°F. Line a large rimmed baking sheet with aluminum foil and place an oven-safe wire rack on top. Set aside.
- In a large bowl, combine ground beef, 2 tablespoons of barbecue sauce, salt, and black pepper. Mix gently to avoid overworking the meat.
- Divide the mixture into four equal patties, about 4 oz each, 3½ inches wide and ½ inch thick.
- Lay two bacon slices in an X shape on a tray. Place a patty in the center, top with a pineapple slice, and fold the bacon over the top. Secure with a toothpick.
- Repeat for remaining patties and place each on the prepared baking sheet.
- Bake in the oven for 15 minutes. Remove and brush the remaining 2 tablespoons of barbecue sauce over the bacon. Return to the oven for another 10–15 minutes, or until the internal temperature reaches 160°F.
- While burgers finish cooking, toast the buns if desired.
- Remove burgers from oven and let rest for 5 minutes before serving on buns with your favorite toppings.
Notes
- Use thick-cut bacon for better wrapping and flavor.
- Secure bacon with toothpicks to ensure it stays in place during baking.
- Optional toppings include lettuce, tomato, grilled onions, or extra barbecue sauce.
- For spicier flavor, add a dash of hot sauce to the meat mixture.
- You can grill the pineapple slices beforehand for added caramelization.
