3/4 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup fresh raspberries, finely chopped
1/4 cup powdered sugar (optional for dusting)
2–3 drops red food coloring (optional for enhanced color
Instructions
Preheat and Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Combine Dry Ingredients: In a bowl, mix together the flour, baking powder, and salt.
Cream Butter and Sugar: In another bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Add Raspberries: Gently fold in the chopped raspberries. If desired, add a few drops of red food coloring for a more vibrant pink color.
Scoop and Bake: Using a spoon, drop dough onto the prepared baking sheet, spacing the cookies about 2 inches apart. Bake for 10-12 minutes or until the edges are lightly golden.
