4 boneless, skinless chicken breasts

¼ cup olive oil

4 cloves garlic, minced

Juice and zest of 2 lemons

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Instructions
Step 1: Make the Marinade
In a medium bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, oregano, thyme, salt, and pepper. The mixture should be fragrant and well blended.
Taste and adjust the seasoning if needed. You want a strong lemony-garlic flavor, as it will mellow during cooking.
Step 2: Prep the Chicken
Place the chicken breasts in the base of your slow cooker. If some pieces are thicker, consider lightly pounding them to an even thickness for consistent cooking.
Pour the lemon-garlic marinade over the chicken, making sure each piece is coated. If desired, nestle in a few slices of lemon for extra visual appeal and flavor.
Step 3: Slow Cook
Cover the slow cooker and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is fully cooked and tender. Internal temperature should reach 165°F (74°C).
The chicken will be lightly golden and surrounded by a fragrant, lemony broth.
Step 4: Serve and Garnish
Transfer the chicken to serving plates. Spoon a bit of the cooking liquid over the top for extra flavor and moisture.
