- 1 1/2 tablespoons cornstarch
- 3 teaspoons fresh lemon juice
Instructions
- In a small saucepan over medium-low heat, combine 2 cups of strawberries with granulated sugar, cornstarch, and lemon juice. Stir as the strawberries soften.
- Use a spoon or potato masher to gently mash the strawberries. Increase heat to medium-high and bring to a boil. Let it bubble for 1 minute, stirring constantly. Remove from heat and let cool to room temperature.
- In a mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until fully combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture until smooth.
- Spread the cream cheese filling evenly into the graham cracker crust, smoothing the top.
- Once the strawberry glaze has cooled, stir in the remaining 3 cups of strawberries until coated.
- Spoon the strawberry topping over the cream cheese layer and spread it gently to the edges.
- Cover and refrigerate the pie for at least 4 hours before serving to allow it to set completely.
