Summer Berry Jello Lasagna is a vibrant, no-bake dessert made with layers of Golden Oreo crust, blueberry cheesecake, and strawberry Jello. It’s the perfect refreshing treat for hot summer days, topped with whipped cream and festive sprinkles.

- 1/2 cup unsalted melted butter
- 2 Tablespoons red sprinkles (optional)
- 2 Tablespoons white sprinkles (optional)

- 6 oz. sweetened berry blue gelatin
- 2/3 cup boiling water
- 1/2 cup cold Greek yogurt
- 1 1/2 cups fresh blueberries
- 8 oz. cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 3/4 cups whipped cream (Cool Whip or homemade)
- 6 oz. strawberry gelatin
- 1 1/4 cups boiling water
- 3/4 cup iced water
- 4 cups sliced strawberries
- 2 cups whipped cream (Cool Whip or homemade)
- Red, white, and blue sprinkles or star confetti (for garnish)
Instructions
- To make the crust, process the Golden Oreos (with filling) into fine crumbs. Add sprinkles and mix with a fork.
- Stir in melted butter until moistened. Press into a 9×13-inch dish and freeze while preparing the next layer.
- For the blueberry cheesecake layer, dissolve berry blue gelatin in boiling water and let cool.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in 1 1/2 cups whipped cream.
- Pulse Greek yogurt and blueberries in a food processor, then mix with the cooled Jello.
- Combine with the cream cheese mixture and spread over the crust. Chill to set.
- For the strawberry Jello layer, dissolve strawberry Jello in boiling water. Add iced water and let cool to room temperature.
- Layer sliced strawberries over the blueberry layer, then pour cooled strawberry Jello on top.
- Refrigerate for 4–6 hours or overnight until fully set.
- Top with whipped cream and garnish with sprinkles or fresh fruit before serving.
Notes
- Use a food processor for smooth blending of fruits and yogurt.
- Let each layer set properly to maintain defined layers.
- Substitute Cool Whip with homemade whipped cream for a fresher taste.
- Decorate with themed sprinkles for holidays like July 4th.
- Store in the fridge for up to 3 days, covered.
