There are few things that warm both the stomach and the soul like a bubbling, golden-brown casserole. When I think of comfort food that brings the whole family to the table, this tater tot casserole with ground beef always comes to mind
Ingredients

1 lb ground beef

1 can (10.5 oz) cream of mushroom soup

½ cup sour cream

1 small onion, diced

2 cups shredded cheddar cheese, divided

1 bag (32 oz) frozen tater tots

Salt and pepper, to taste

Optional: garlic powder, paprika, or other favorite spices
Instructions
Step 1: Preheat your oven to 375°F (190°C). Grease a casserole dish lightly with oil or nonstick spray.
Step 2: In a large skillet over medium heat, brown the ground beef. Once it starts to brown, add the diced onion. Cook for 5–7 minutes, stirring occasionally, until the onions soften and the meat is fully cooked.
Step 3: Season the beef mixture with salt, pepper, and optional seasonings like garlic powder or paprika. Stir in the cream of mushroom soup and sour cream. Cook for another 2–3 minutes, just until everything is warm and well combined.
Step 4: Pour the beef mixture into the prepared casserole dish. Use a spatula to spread it evenly across the bottom.
Step 5: Sprinkle 1 cup of shredded cheddar cheese over the beef layer. This first layer of cheese melts down into the meat mixture for extra richness.
Step 6: Arrange the frozen tater tots on top in a single layer. Try to cover the entire surface for an even, crispy finish.
Step 7: Bake for 25–30 minutes until the tater tots are golden and crisp. Remove from the oven and sprinkle the remaining 1 cup of cheese on top.
Step 8: Return the casserole to the oven for another 5 minutes or until the cheese is fully melted and bubbly.
Step 9: Let the casserole rest for 5–10 minutes before serving. This helps it set and makes it easier to slice
