- 1 cup dried split peas, rinsed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced

- 1 bay leaf
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil

Step 1: Sauté Vegetables
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the diced onion, carrots, and celery to the pot.
Sauté the vegetables for 5-7 minutes, or until they’re softened, stirring occasionally.
Step 2: Add Garlic
Add the minced garlic to the pot and cook for another 1-2 minutes, or until fragrant, stirring constantly.
Step 3: Add Remaining Ingredients (Except Parsley)
Stir in the rinsed split peas, diced potato, bay leaf, dried thyme, and smoked paprika.
Pour in the vegetable broth or water. Stir well to combine all the ingredients.
Step 4: Bring to a Boil and Simmer
Increase the heat to high and bring the mixture to a boil.
