Description
Have you ever tasted a frozen treat that’s so refreshing it feels like a summer breeze with a zesty kick? That’s what Watermelon Mezcal Pops are – juicy watermelon popsicles with a splash of smoky mezcal! But here’s the big question: How can a simple popsicle taste so fancy and fun? The secret is in the sweet watermelon, a hint of lime, and a few easy tricks we’ll share today.
Ingredients
To make Watermelon Mezcal Pops, you need just a few ingredients. Here’s what you’ll use and why each one matters:
-
Seedless Watermelon (3 ½ cups, ½-inch dice): The star ingredient, providing sweet, juicy flavor and a vibrant pink color. Seedless makes prep easier.
-
Mezcal (⅓ cup): Adds a smoky, boozy kick that elevates the pops to a grown-up treat.
-
Fresh Lime Juice (2 tbsp): Brings a tangy, citrusy balance to the sweetness.
-
Superfine Sugar (2 tbsp): Dissolves quickly to sweeten the mixture without graininess.
Substitutions and Variations
-
Non-Alcoholic: Replace mezcal with ⅓ cup water or sparkling water for a kid-friendly version.
-
Gluten-Free: This recipe is naturally gluten-free!
-
Vegan: Also naturally vegan, no changes needed.
-
No Superfine Sugar: Use regular granulated sugar, but blend longer to dissolve, or use 1 ½ tbsp honey.
-
Different Booze: Swap mezcal for tequila for a margarita vibe or rum for a tropical twist.
These ingredients are easy to find and make a popsicle that’s both fun and flavorful!
Instructions
Step 1: Blend the Mixture
-
In a blender, combine 3 ½ cups diced seedless watermelon, ⅓ cup mezcal, 2 tbsp fresh lime juice, and 2 tbsp superfine sugar.
-
Blend on high for about 1 minute until very smooth and thoroughly combined.
-
Stir the mixture with a large spoon or rubber spatula to reduce foam.
Tip: Cut watermelon into small, even pieces for easier blending. Taste and adjust sugar if your watermelon is less sweet.
Step 2: Fill the Molds
-
Pour the mixture into six 4-oz ice-pop molds, filling each to the top.
-
Insert popsicle sticks and tap the molds gently on the counter to release air bubbles.
-
Freeze until solid, at least 8 hours or preferably overnight.
Tip: Leave a tiny bit of space at the top to prevent overflow as the mixture expands. Ensure molds are level in the freezer.
Step 3: Unmold and Serve
-
Remove the pops from the freezer and run the molds under hot water for 5-10 seconds to loosen.
-
Gently pull the pops out and serve immediately.
Tip: If pops don’t release easily, run under water a few seconds longer. Serve with napkins, as they can be juicy!
